Executive Chef of Casa Pomona, Jodi Bernhard, spent ten years on Wall Street before making the decision to attend the Cambridge School of Culinary Arts to become a chef. She began her culinary career as the only female on James Beard Award winner Ken Oringer’s line at Clio in Boston.
When the opportunity arose for her to become part of the Mobil five-star kitchen at The Inn at Little Washington, Jodi jumped right in. While running the kitchen for James Beard award winning chef Patrick O’Connell she had opportunity to work alongside guest chefs such as Thomas Keller and Jean Louis Palladin.
It was at The Inn that Jodi mastered the art of using seasonal and local ingredients in ways that brought out their inherent and natural flavors and textures without unnecessary embellishment. A simple approach was used to highlight the beauty of local morel mushrooms foraged just hours earlier from the foothills of the Shenendoah Mountains just up the road from The Inn, or peaches, still warm, having been picked at the local orchard a couple of hours before delivery.
Following her time at The Inn, Jodi spent a few years as the Executive Chef at the Bedford Village Inn in New Hampshire before opening a restaurant with her husband, Keith. Apocrypha, their fine dining restaurant in Needham, Massachusetts, featured a menu that changed daily and, true to Jodi’s culinary philosophy, focused on classical European preparations of local ingredients.
After a stint as Executive Chef of Longwood Events in Boston, where Jodi twice prepared celebration dinners for President Barack Obama, she returned her focus back to classical, simple European cuisines as Executive Chef with Barcelona Restaurant in Connecticut. While at Barcelona, Jodi built from the French and Italian influences in her cooking style to bring forth the flavors of Spain.
Jodi’s new project will mark her New York City debut. As the executive chef at Casa Pomona, a new Spanish tapas restaurant on the Upper West Side, Jodi is excited to introduce New York diners to her own unique spin on traditional Spanish cuisine.
